In the battle against COVID-19, many industries suffered but the challenge that the restaurant business faced was devastating and nearly impossible to conquer. Yet, the restaurant workers and owners in New York City demonstrated tremendous persistence, creativity, and love in their defense against the pandemic. Almost every restaurant faced the struggle to maintain normal operations. Some have come up with unprecedented ways to continue serving the customers, some focus on providing support for the entire restaurant industry in the city, and some go above and beyond to spread the love across the community.
This project may serve as a guide to alternative operation models for restaurants during public health crises, but I would prefer it being an archive of the battles that the restaurant workers have fought for the people and the city.
The COVID-19 pandemic is not over yet, and many restaurants in the city may still be struggling. Yet seeing how much the restaurant workers have done and are still doing to help gives us hope.
The storm will pass.
